What is Paix Dieu?

A full-moon tripel

Paix Dieu is a tripel from Brasserie Caulier, a brewery in Péruwelz in the Belgian province of Hainaut. The beer is named after the Cistercian abbey of Paix-Dieu, and on the 33 cl bottle you see that name as Cistercian Paix Dieu. People search for it as paix dieu or paix dieu beer.

What makes the beer famous is when it is brewed. Paix Dieu is brewed only when there is a full moon, at night. This is a brewery tradition and the story behind the brand. In the glass, you get a cloudy, golden beer with a rich, creamy head. The taste is soft and malty, with fruit, yeast, coriander, and herbs, plus a light bitterness. At 10%, it is one of the stronger tripels, so you drink it slowly.

How to drink it

How to pour Paix Dieu

A strong tripel should not be drunk ice-cold; take your time with it.

In a footed tulip

Hold the glass at an angle and let the beer run down the side. Stand the glass upright when it is two-thirds full and top it up by pouring into the middle, for a head two fingers high.

With or without yeast

Paix Dieu is cloudy. If you leave the sediment in the bottle, the beer stays somewhat clearer. If you pour it in too, you taste more yeast and spices.

8 to 12 degrees

Take the bottle out of the fridge half an hour before serving. At that temperature, the fruit and spices open up. Share the large bottle between two or three people.

A 38 to 40 cl tulip or footed bowl. The shape, which tapers slightly towards the top, keeps the aroma above the beer, while the stem prevents your hand from warming the beer. These are the glasses we recommend ourselves.

What is Paix Dieu beer?
Paix Dieu is a Belgian tripel with 10% alcohol, brewed by Brasserie Caulier in Péruwelz. What makes it special: the beer is brewed only when there is a full moon. The name comes from the Cistercian abbey of Paix-Dieu.
Why is Paix Dieu brewed during a full moon?
That is the tradition the brewery follows: Paix Dieu is brewed only on the nights of a full moon. It is a defining feature of the brand and makes the beer recognizable. Whether the moon changes the taste is for you to decide.
How much alcohol is in Paix Dieu?
Paix Dieu contains 10% alcohol. That is strong, even for a tripel, which usually contains between 8 and 9.5%. The beer is soft and creamy, so you taste the strength less than you might expect.
What does Paix Dieu taste like?
Cloudy golden in color, with a rich, creamy head. You taste a soft, malty body with fruit, yeast, coriander, and spices, and a slight bitterness in the finish.
Which glass do you use for Paix Dieu?
A tulip glass or stemmed chalice holding 38 to 40 cl. The shape retains the fruity and spicy aroma, and there is room for 33 cl of beer with a head on top.
What temperature should you drink Paix Dieu at?
Around 8 to 12 degrees, like most tripels. Take the bottle out of the refrigerator half an hour before serving. When ice-cold, you taste less of the fruit and spices.
