Pressure and temperature are controlled by the espresso machine. You do almost everything else yourself, by hand. How much ground coffee goes into the portafilter? Is it distributed evenly, do you tamp it level, and how long does the shot run? Those four things largely determine whether your espresso tastes sour or full-bodied.
The tools on this page help you get those four things under control. Tampers and leveling tools for tamping. Dosing cups and a WDT tool for distributing the grounds. Milk pitchers and a thermometer for frothing, a scale with a timer to repeat a good shot, and brushes and blind filters to keep the machine clean.

What tamper size fits my portafilter?
Measure the inside of the filter basket. It’s usually 58 mm, but there are also 57 mm baskets. You can feel the difference of just one millimeter: the water runs along the edge of the coffee puck instead of through it.
What size milk pitcher do I need?
For one cappuccino, 35 or 50 cl is enough. For two cups at once, choose 75 cl, and for a run of orders, 100 cl. In a pitcher that’s too large, the milk won’t reach high enough in the spout, making latte art difficult.
What do you use a WDT tool for?
Use the fine needles of a WDT tool to break up clumps in the ground coffee before tamping. Skip this step, and the water will take the path of least resistance, causing the shot to run unevenly. You’ll taste both sourness and bitterness.
How do I clean a milk pitcher properly?
First rinse the pitcher with cold water, then wash it in warm water. Warm water makes milk proteins stick to the steel, leaving a dull film behind. Wipe the steam wand clean right after each pitcher, before the milk dries.
