What is Filliers?

Belgian grain genever, aged for up to 21 years

Filliers is a Belgian family business in Bachte-Maria-Leerne, near Deinze in East Flanders. The distillery has existed since 1880. Genever is just as much at home in Belgium as in the Netherlands; the name is protected and may only be used for genever from the Netherlands, Belgium and a few border regions.

Filliers is best known for aging genever in American oak barrels. This aging is what distinguishes the bottles: Young & Pure has never seen a barrel and is fresh and light, while the 8-, 12-, 17- and 21-year-old genevers become increasingly smooth and complex. The juniper berries recede into the background, making way for vanilla and wood. Filliers also makes sweet fruit genevers from fresh juice, cream genevers with cream, an advocaat based on the recipe of Julia Denecker, Firmin Filliers' wife, and gin based on Firmin's own recipe.

The Young & Pure smells fresh, with notes of grain and juniper. In the aged genevers, vanilla, oak, and soft spices come to the fore.

Mouthfeel

Soft and round

The longer it spends in the barrel, the softer and rounder it becomes. The 8 Years is still fresh, while the 17 and 21 Years are full-bodied and silky smooth.

Three ways to drink Filliers

Unaged ice-cold, aged at room temperature, and sweet genevers chilled from the refrigerator.

Young & Pure ice-cold

Put the bottle in the freezer and fill a shot glass to the brim. Or use it in a highball with lemon and sparkling water.

Pour the 12, 17, or 21 Years into a tumbler or tasting glass at room temperature. Let the glass stand for a moment; the vanilla and oak will come through more clearly.

Where does Filliers come from?

How much alcohol is in Filliers jenever?
Young & Pure is 35%. The aged genevers increase with age: 40% for the 8-year-old, 42% for the 12-year-old, 44% for the 17-year-old and 46% for the 21-year-old. The fruit jenevers are 20%, the cream jenevers 17% and the advocaat 14%.
What is the difference between Belgian and Dutch jenever?
Basically, nothing: both are grain jenevers made with malt wine and juniper berries, and the name is protected in both countries. However, sweet fruit jenevers and cream jenevers are very popular in Belgium, and Filliers makes those too.
How do you drink aged jenever?
At room temperature, neat in a tumbler or tasting glass. Serving it cold masks the vanilla and wood notes the jenever gained from barrel aging. Young, unaged jenever is best served ice-cold.
Which glass do you use for jenever?
For ice-cold young jenever, use a small stemmed shot glass filled to the rim. For aged jenever, use a tumbler or tasting glass. Serve fruit and cream jenevers in a small liqueur glass.
Does Filliers also make gin and whisky?
Yes. Dry Gin 28 is made with 28 botanicals, based on a recipe by Firmin Filliers, and there is a pink version with raspberry and goji berries. Filliers also makes Belgian single malt whisky, including a ten-year-old whisky matured in sherry casks.
