This Yarai mixing glass from Bar Professional has a double wall, holds 55 cl, and is made of glass with a diamond pattern. The air layer between the two walls keeps the contents cold for longer than a single-wall mixing glass.
What the double wall does
With a single-wall mixing glass, the heat from your hand and the bar passes through the glass to the ice. A double wall insulates against this, so the ice melts more slowly and you have more control over dilution: you can stir for longer without the cocktail becoming watery. The outer wall also does not fog up, so the glass remains clearly visible to guests. Stir with a long bar spoon along the inner wall.
Choosing and maintaining it
Choose this glass if you work in view of the guest or if your bar is warm; if you are working quickly one drink after another, a single-wall model from the mixing glasses range will be sufficient. Hand-wash double-walled glass in lukewarm water and avoid major temperature changes, as they put stress on the seam between the two walls. Leave the glass upright to drain. Strain with a hawthorn or julep strainer from the cocktail strainers range.
