Chef & Sommelier Lima

The 35 cl tumbler is the smallest and suits drinks with one large ice cube or a few cubes. The 38 cl offers a little more space and is more convenient when working with crushed ice. Among the tall glasses, the 40 cl is the standard size for a long drink with ice, while the 45 cl is intended for more generous serving proportions or drinks with lots of fruit in them. If you work with standard sizes behind the bar, it is useful to have two of each. If you want to compare more broadly, take a look at the tumbler glasses and the long drink glasses.

Build long drinks in the glass, not in the shaker. First fill it with ice to just over halfway, then pour in the spirit, and add the carbonated component last so you don't stir out the fizz. A Moscow Mule works this way, as does a Long Island Iced Tea where the cola is added last. With a lowball glass, do it the other way around: first add the ice cube, then pour the strained drink over it.

The rim is reinforced, and that is where bar glasses almost always go. Kwarx also holds on to its clarity where ordinary catering glass turns dull over time. Wash on a short glassware programme; citrus acid and syrup leave residues that are better rinsed off straight away than left to dry on. Don't stack the glasses tightly inside one another.

Are you looking for a tall glass specifically designed for gin and tonic, with a wider bowl? You’ll find them among the gin and tonic glasses. Would you like to see the rest of the Chef & Sommelier range, from wine glasses to spirits glasses? You can find it on the brand page. And if you’re still missing the tools, the cocktail shakers are ready, along with the strainers and bar spoons that go with them.
