Choose on the basis of what goes into the glass. The 24.5 cl coupe is the wide, shallow bowl for cocktails without ice: a daiquiri, a sidecar or a classic champagne serve. The 19 cl martini glass is tighter and forces a smaller pour, which is exactly the point with a strong mixed drink. The 58 cl gin and tonic glass has room for plenty of ice, a generous splash of tonic and a garnish that is not wedged in. The 26 cl wine glass is a compact bowl for house wine and the 17.5 cl flute holds the bubbles longer. Alongside this series you will find the champagne coupes and the gin and tonic glasses.

Pour a coupe to about a centimetre below the rim, because the wide opening forgives nothing if you fill it right up before handing it over. Chill the bowl first with ice and water, tip it out and only then pour: a chilled glass keeps a dry martini at temperature for minutes without any ice in it. Fill the gin and tonic glass to the rim with ice first, then the gin, then the tonic down a spoon so the fizz stays in. For the flute, the french 75 is the classic choice.

Hospitality glass from Onis is made for glasswashers that run dozens of times an evening, and the Spksy is no exception. Wash on a short programme with soft water, because limescale settles visibly in the facets of cut glass. Stand stemmed bowls upright in a rack with holders and let them drain upside down on a grid rather than on a cloth.
