Choose the bowl to suit the wine, not the table. The 31.2 cl white wine glass keeps a normal pour cold because little surface is exposed to the air. At 40.8 cl you get the all-round size that takes both white and young red. For bordeaux there is the tall 64.5 cl bowl, and the 81.4 cl burgundy shape is deliberately wide and rounded, so an aromatic wine has room without you overfilling it. Pour up to the widest point and hold the glass by the stem. In an 81.4 cl burgundy bowl that means roughly a quarter full, which looks stingy until you notice how much aroma gathers in the space above it.

The 21 cl champagne glass has an etched effervescence point in the base for the carbon dioxide to cling to, which keeps the trail of bubbles going. Chill the 27 cl martini glass in the freezer beforehand, for a dry martini, for instance. For a french 75 use the flute.

Fully tempered glass handles the dishwasher better than the thin wall suggests, precisely because the transition from stem to bowl is no longer a weak point. Wash on a short glassware programme and rinse with soft water.

A film of limescale stands out particularly on clear crystal glass and disappears with a dash of vinegar in the rinse water. Store the glasses upright afterwards with space between the stems, because more damage happens in the cupboard than at the table.
