Stolzle Ultra

The difference between the three glasses lies in how much air you give the wine. In the 37.5 cl glass, you pour young white wine that needs to retain its freshness, because a smaller glass allows less evaporation. The 45 cl is the size found on most tables, suitable for both white and light red wine. The 55 cl is for red wine with firm tannins, which benefits from space. The 19 cl flute is narrow and tall, keeping the bubbles in a tight stream for longer instead of letting them escape immediately.

Never fill a wine glass more than one-third full. You need the empty space to swirl it, and without swirling, the aroma is not released. Fill a flute to about two-thirds full instead, along the side and in two pours, so the foam does not spill over the rim. A kir royal is built in the flute with the crème de cassis at the bottom, while a mimosa is made with the juice first.

That pulled stem is at once the strongest feature of the series. Where an applied stem can snap at the join, Ultra is one continuous piece of glass at that point. Stölzle Lausitz calls that dishwasher safe for several thousand cycles, and in hospitality that is the difference between reordering every year and not. Wash on a short glassware programme, stand the bowls upright and do not let them touch each other.

If you want to compare other series from the same manufacturer, take a look at Stölzle Lausitz, where, alongside Ultra, you’ll find the heavier and wider lines. If you’re searching by shape instead, you’ll find Ultra among the champagne flute glasses and the red wine glasses. If you serve sparkling wine at the table, champagne coolers will keep the bottle at the right temperature without you having to put it away.
