1.5 cl cinnamon syrup
1 cl fresh lime juice
10 cl cold prosecco
1 sprig rosemary and 3 cranberries
How to make it

Mix the cranberry juice, cinnamon syrup, and lime juice — you can make this part days in advance and keep it chilled.

Pour the mixture into a chilled champagne glass.

Top up gently with ice-cold prosecco; pouring along the inside of the glass helps preserve the bubbles.

Batching: eight cocktails at once

The only way to sit at the table yourself at Christmas is to mix in advance. The rule is simple: anything that contains no bubbles and doesn’t need dilution can be bottled. Mix the spirits, syrup, and juices in the recipe’s proportions multiplied by eight, pour it into a sealed bottle, and refrigerate it — you can do this three days in advance. When serving, just add ice, bubbles, and garnish. One exception: fresh citrus loses its freshness within a day, so juice it on the day itself. Allow for one and a half cocktails per guest for the aperitif and keep one non-alcoholic option on hand.

The right glass

At Christmas, you mainly serve sparkling drinks, so choosing the right glass is a real consideration. A flute retains carbonation the longest — useful if the glass stays in someone’s hand for an hour. A coupe offers more aroma and looks more festive on the table, but your bubbles disappear faster. For Christmas, we choose a 16 to 20 cl flute, spacious enough for a spritz with garnish. Chill the glasses for half an hour before you start; with a full table, you won’t have time later.
