Dewar's
A smooth blended Scotch that matures once more after blending. Everything about the whisky house, the bottles, the flavour, the highball and the glass to serve it in.
A blend that matures twice
Dewar's is a blended Scotch whisky. The company began in 1846, when John Dewar opened a wine and spirits shop in the Scottish city of Perth. His sons John and Tommy turned it into an international brand. Tommy Dewar travelled the world to sell the whisky, including in America, where Dewar's remains one of the best-known Scotch brands.
A blend is a mixture of single malts and grain whisky from different distilleries. At the heart of Dewar's is Aberfeldy malt, from a distillery in the Highlands that the Dewar family had built at the end of the nineteenth century. A defining feature is the double maturation: after blending, the blend returns to oak casks so the whiskies can integrate more fully. This makes Dewar's smooth and rounded. The brand has been part of Bacardi since 1998.

In brief
What types of Dewar's are there?
At Gall & Gall, you'll find the 12 Years, two 8 Years with special cask finishes, and the older Double Double blends in 50 cl bottles.

Dewar's 12 Years
The house classic. After blending, it matures together for another six months in oak casks. Honey, vanilla and a little fruit.

Dewar's Japanese Smooth
An 8-year-old blend finished for up to six months in Japanese mizunara oak casks. Smooth and rounded, with a hint of spice.

Dewar's French Smooth
An 8-year-old blend finished in French oak casks. Fresh and fruity, with apple and citrus.

Dewar's Double Double 21
A 21-year-old blend that matures and blends in four steps: first malts and grain whisky separately, then together. Rich, smooth and refined.

Dewar's Double Double 27
The same four-stage maturation, with whisky aged for at least 27 years. Deeper and more complex, with dried fruit and oak.

Dewar's Double Double 32
The oldest of the range: 32 years, also made using four-stage maturation. A bottle for enthusiasts who want to taste old blends.
Start with the 12 Years. It makes the best highball and is also perfectly good to drink neat.
Soft and round, with honey and vanilla
Honey & fruit
Honey, vanilla, and light notes of pear and apple. A little grain and heather, with no significant smoke.
Creamy and soft
Round and smooth, with toffee, honey, and a hint of spices. The double maturation makes the whisky feel smooth, without sharp edges.
Medium-long
Sweet and lightly spicy, with oak. The Double Double bottles linger longer, with dried fruit and nuts.
Flavor profile of Dewar's 12 Years. The 8 Years bottles are lighter and fruitier, while the Double Double bottles are fuller and more complex.
Three ways to drink Dewar's
Dewar's is made to be versatile. Neat is perfectly fine, but in America and Japan, the highball, whisky with ice and soda water, is the most popular way to drink it.
Highball
Fill a highball glass with ice, pour in 50 ml of Dewar's 12 Years of Japanese Smooth, and top up with 100 to 150 ml of cold soda water. Stir gently once, optionally adding a lemon twist.

One large ice cube in a heavy tumbler. The cold makes the whisky fresher and smoother without diluting it too quickly.
Glass: tumbler →Neat
Drink the Double Double bottles neat, at room temperature, from a tasting glass. This lets you taste the layers of the long maturation.

A smooth blended Scotch is the basis of many whisky cocktails. Dewar's 12 Years works well in classics that call for Scotch.

Penicillin
Blended Scotch, lemon, honey, and ginger. Dewar's 12 Years is an ideal base.
Old Fashioned
Whisky, sugar, and bitters. With a smooth blend, it becomes rounded and approachable.
Hot Toddy
Hot water, honey, lemon, and whisky. Simple and warming.
