First, consider what you are pouring. A small glass of pilsner fits 33 cl, giving you approximately 25 cl of beer with the rest being foam. The 40 cl is the standard for half a litre minus the head and the most commonly requested size in the hospitality industry. Use the 48 cl for weissbier and beers that produce a lot of foam.

First rinse the glass with cold water. A wet glass lets the beer slide down the side instead of splashing onto it, which makes the head calmer. Hold the glass at an angle under the tap, aim at the side, and only straighten it when it is two-thirds full. The final pour creates the head.
