L.S.A. Cellar

For those who want an entire bar in a single design, Cellar by L.S.A. is a series that goes beyond wine alone. It covers four very different occasions: a cocktail before dinner, water with the meal, beer in the afternoon, and cognac afterwards.

The glasses are mouth-blown, which means there may be slight variations in size and wall thickness. This is not a flaw but a characteristic of the technique: no two glasses are exactly alike. Everything is supplied in sets of six.

Four glasses, four purposes

The 25 cl cocktail glass is the size for drinks served without ice, which therefore have to leave the bar cold: a martini, a daiquiri, anything you stir or shake and then strain. The 52.5 cl water glass is roomy enough to double as a longdrink glass.

The 42.5 cl beer glass takes a lager or a light craft beer with room to spare for the head. The 60 cl cognac glass is the odd one out: a large balloon with a narrow opening, made for swirling a shallow measure so the aroma gathers under your nose.

Pouring and serving

Put a cocktail glass in the freezer beforehand, or fill it with ice and water while you mix; a dry martini that ends up in a lukewarm glass is too warm within two minutes. Only strain once the glass has misted over.

The cognac glass takes no more than a shallow pool, roughly three to four centilitres. For an espresso martini you want the small glass instead, so the layer of foam stays spread across the full width.

Mouth-blown glass

Mouth-blown glass is thinner than machine-made glass, and you notice it at the rim. To keep it looking good for a long time, wash it by hand or place it loosely on the top rack so the glasses never touch each other.

Avoid sudden changes in temperature: a glass taken from the freezer and held straight under a hot tap is the most common cause of a crack.
