The 35 cl bowl is the right size for white wine. A smaller volume means the wine warms up less quickly in the glass, which is exactly what you want with a crisp white wine. The 47 cl bowl is for red wine: it holds a normal serving with plenty of air above it, allowing the wine to breathe without overfilling the glass. Fill both bowls to about one-third full. That may seem stingy, but it’s why the glass is so large: the space above is working room. Swirl the glass a few times by the stem before smelling, so the wine rises along the sides and creates more surface area. Hold the glass by the stem, not the bowl, otherwise your hand will warm the wine. For a kir royal use a different glass, but a pitcher of sangria is poured into the large bowl.

Crystalline glass contains no lead but does contain other metal oxides that make it clearer and stronger than ordinary glass, so the stem can stay slim without snapping straight away. They are dishwasher safe, but stand them upright in a basket with stem clips rather than letting them tip over. The stem is the weak point, not the bowl.
