Look at how the wine tastes, not at the label. Light & Fresh at 38.2 cl suits dry, crisp white wine with plenty of acidity, such as sauvignon blanc or a young riesling. Fruity & Delicate at 55.5 cl is roomier and works with fruity reds and fuller whites.

Flavoursome & Spicy at 68.9 cl is meant for wine with spice and oak ageing. Velvety & Sumptuous at 74 cl is the largest bowl in the series and gives heavy, tannic wine enough air. The 40.7 cl champagne glass is deliberately generous, because modern champagne needs more room than a narrow flute offers.

Always pour up to the widest point of the bowl. In the 74 cl that looks like very little wine, but it is exactly that empty space above the wine which catches the aromas and makes swirling possible without spilling.

Serve crisp white wine at around eight degrees, fuller wine a little warmer and red wine at around sixteen. The 53 cl tumbler is the exception: fill it with ice and water or a long drink and simply hold it by the side.

Simplify is made of crystal glass with a thin rim, which you notice because there is barely anything between the wine and your lip. That thin rim is also the most vulnerable part, so never stack the glasses and store them upright rather than upside down on the rim.

The series can go in the dishwasher at up to sixty degrees. Place the bowls apart from each other, because most breakage comes from glass knocking against glass as the spray arm turns.
